Peach and Strawberry Eggless Ice-Cream

I really wanted to make ice cream today. Only I was missing a few ingredients and I didn't want to go up to the shop to get them. What was I to do?? I could have waited (which I am not very good at doing) or I could go wild and make up a completely new and different recipe which I will now share with you.

I make ice cream a lot lately and I think that this one has been the best combination so far. I had no eggs and I can't handle a lot of milk products so I thought there must be a way to overcome these problems... and there was. Read on for one of the best ice cream recipes:


Ingredients:

1 cup coconut milk
1 cup lactose free milk (or you can sub normal milk, soy milk, oat milk etc)
4 tsp Arrowroot powder
1 1/4 cup of silken tofu ( or you can sub whipped cream)
2/3 cup sugar
2 tbs syrup (honey, maple or golden)
1/4 tsp salt
2 tsp ground ginger
2 cups sliced peaches
1 cup diced strawberries

Method:

To make tofu mixture

1)  Place silken tofu into a blender/food processor with a tsp of either sugar or syrup and wizz until the tofu is the consistancy of whipped cream. Place into a bowl and set aside in the fridge.

To make fruit mixture

1) Place peaches and strawberries into a blender/food processor and blend till you have a thick puree. Place into a bowl and set aside in the fridge.

To make the custard

1) Pour 3/4 cup of your milk into a bowl and mix in the arrowroot powder and mix to a paste. Set aside.
2) In a saucepan, mix remainder of both milks, sugar, salt, ground ginger, syrup and gently heat. 
3) When warm, add the arrowroot mixture and stir over a low heat till mixture thickens and coats the back of a spoon. Remove from heat, pour into a metal bowl and place into the fridge till cold.

To make ice-cream

1) Take the custard, tofu and fruit out of the fridge. Set aside 1/4 cup of the fruit mixture and gently mix everything else together till thoroughly combined.
2) Place mixture into your ice-cream machine as per your machines instructions.
3) When it is the consistency of soft serve take out of the machine and place into a container. Layer the ice cream with the excess fruit mixture till you have filled the container.
4) Place into the freezer till it has set.
5) Enjoy :D

Best Citrus Icecream you will eat!

Last night I made the best ice cream I have done in ages. It was creamy, zingy and melt in your mouth. With a pleasant after taste to boot!! My recipe is so very easy to make and it only has 3-4 ingredients!!! You definitely have to try this ice cream.

Citrus Ice-Cream

Ingredients:

1 lemon
2 oranges
1 can of condensed milk
500g thickened cream

Method:

Juice the lemon and oranges. (If you want a stronger flavour grate a little of the peel and add that)
Whip the thickened cream until the cream has stiff peaks. Add the condensed milk to juice and cream and mix well. Put in an ice cream machine and let it do it's magic. The put mixture into a container and pop into the freezer to set.

There you have it! Easy, tasty and so smooth you will never go back. This type of recipe can be adapted for all types of flavours so experiment and let me know how it goes!!!

Oat Milk

I have recently discovered Oat Milk. I have always had an slight reaction to cows milk, it makes me want to throw up if I drink too much. When I get a cold, I can't have any milk products because it makes me too mucusy. I have tried Little A on cows milk in her porridge and weetabix and I think she has the same problem I do with milk, so I have been researching alternatives. I didn't want to use Soy Milk then I came across Oat Milk. It is fantastic! It has a slightly sweet flavour to it and the best thing is, if you don't like the commercial brand then you can make your own. Here is a quote from a website about the benefits of Oat Milk:
One of the advantages of oats over other grains is that it is the only grain to contain high levels of protein similar to those found in legumes. Studies have shown that oats have a protein quality similar to that found in soy beans, which are often considered to be the best protein source for vegetarians. Some studies, too, suggest that some oat cultivars are safe for consumption in a gluten free diet and can be used as a substitute for wheat by individuals with celiac disease. It is recommended, though, that this only be done after consultation with a qualified health care practitioner or if an oat or oat milk product is specified "gluten free."
Aside from protein, oat milk is said to contain 10 essential minerals and 15 vitamins. A single glass of oat milk can contain up to 35% of the United States RDA (Recommended Daily Allowance) of calcium, making it a particularly good milk substitute. Another benefit of oat milk is that it is a low fat alternative to milk, containing just 2.5 grams of fat and 0 grams of saturated fat per serving compared to milk's 8 grams of fat and 5 grams of saturated fat. It is also cholesterol free, whereas whole milk contains 24mg of cholesterol per serving.

 To make your own Oat Milk you need to boil 5 cups of water, add 1 cup of oats and simmer till cooked. Then blend throughly.

Thats all there is to it! How easy is that!

I am going to see how I can subsitute milk in other recipes like ice cream, rice pudding and more.It seems that Little A can tolerate this better than cows milk at the moment, which is fantastic.

Divine Mocha Ice Cream

Yesterday I made a cheats version of mocha ice-cream. It turned out great! There are a few things I would change but I will put those into some notes after. 

I love trawling cooking /food blogs and sites, I get so many ideas to try out. As a previous post states, I like to experiment with recipes and this was one I played with. Here is the recipe!

Ingredients:

500g custard (fresh or packet)
1 cup milk
1 cup iced coffee (or a shot of expresso)
500g whipping cream
1 small block of dark chocolate (I used black and greens)
2 tbsp sugar

Method:
  1. Prepare your custard and put mixture into saucepan. Gently heat it and then add milk and iced coffee, combine well.
  2. Break the chocolate into pieces and add to custard and stir till chocolate has melted through then add the sugar.
  3. Put into the fridge or freezer ( I use the freezer to make it cool faster) till the custard is cold. 
  4. Whip the cream till light and fluffy then fold into the custard and mix well. You will have a moouse like substance. Place this into the ice cream maker and let the machine do its thing.
After the ice cream machine is done, put ice cream into the freezer for a few hours to set and then enjoy :D

NOTES: *I have put a whole block of chocolate as I only used half and it wasn't chocolate enough. 
                * If you are a coffee lover then use the expresso shot as well as iced coffee.

What to make today?

Today I am thinking of making ice cream. A couple of different flavours like lemon ice cream and chocolate icecream. The weather has been really strange lately but it is warming up now and I know my partner would love to have a steady stream of ice cream in the house (sugar addict that he is) What is your favourite flavour of ice cream? I myself am not much of a fan, but when I do eat it - i love dark choc mint and lemon. It is a good thing my neighbour has a lemon tree that is alway full of fruit that they let me pillage when I want.
